I am interested in starting a project....
But I am curious as to how complicated that is? I am interested in doing something on pollinators. Any advice on whether I should leave that to a serious expert, or if a layperson like myself could start something like that?

I am not sure how often folks read journal posts. You may want to check out the "feedback" section that's at the bottom of inaturalist pages. This seems to be a more active discussion area.
I actually do read journal posts, but I forgot about this one. If you're talking about just starting an iNat project, that's easy: just go to
http://www.inaturalist.org/projects/new
and get going. Like any social activity, though, the hard part is getting people to participate.
